Delicious, healthy, and tender cottage cheese casserole with fruit / berry filling without flour, semolina, or sugar! Holds shape perfectly and slices well!

I used peaches as filling.

Ingredients

g cottage cheese Reset
Low-fat cottage cheese 500 g
Eggs 1 pcs. ( 50 g )

Allulose 25 g
Sucralose 0.08 g
Salt 1.2 g
Lemon zest (dried, ground) 0.5 g
Vanillin 0.3 g OR
"Vanilla sponge cake" food flavoring 5 drop(s)
Whey protein concentrate [WPC 55] 8 g
k-carrageenan 1.2 g
Xanthan gum 0.6 g

Fruits / berries 150 g
Potato starch 8 g

Steps

1. Prepare filling

Wash fruits / berries and dice into small pieces.

Mix filling with starch.

2. Prepare remaining ingredients

Thoroughly mix all other dry ingredients.

Weight cottage cheese into a deep bowl.

3. Crack eggs into cottage cheese

And mix slightly.

If cottage cheese is grainy, you can blend it!

4. Add dry ingredients in portions

Thoroughly mix everything every time.

5. Add filling

Carefully, in portions, "folding", add fruits / berries.

6. Transfer into baking dish

Transfer everything into a baking dish.

7. Bake

Bake at 170°C for 25–35 minutes without convection on a middle rack.

Casserole is ready when internal temperature reaches 85°C. At this stage, you can turn on only top heater to create crust.

8. Cool fully

Remove from oven and cool.

Carrageenan sets only AFTER casserole fully cools!

9. Store in a fridge
